Located at The Shops at Palmilla, across the highway from the One & Only Palmilla Resort between San Jose del Cabo and Cabo San Lucas, Nicksan's second restaurant in this destination has been one of the best sushi restaurants in Mexico for decades.

Upon entering the restaurant, the first thing you notice is the eclectic yet simple decoration. For some travelers, it can be a welcome relief after dining at other over-the-top, beige monochromatic Instagrammable places. At Nicksan, the focus is on excellent sushi and great service.

Ever since my first dining experience at Nicksan's original location at the Marina in Cabo in the late nineties, I knew this place was different. Nicksan meets all the expectations of traditional Japanese sushi, considering the heritage, techniques, and protocol of the food genre. However, as you delve into their salads and sashimi, you quickly realize that this is not your run-of-the-mill, good sushi place. The blend of Japanese and tasteful yet bold Mexican culinary influences is evident throughout the menu. This fusion is carefully orchestrated, not the easy way by simply placing a thin slice of jalapeno on top of a fatty tuna nigiri, but in a way that requires imagination, respect for the ingredients, trial and error, and especially good taste. The menu boasts favorites like a perfectly balanced cilantro sauce that complements delicate and high-grade raw fish.

One of the key factors contributing to the 26-year success of this place is the strategic approach they have taken in developing and evolving over time. They incorporate curry oil, lemon, and lime to craft original dishes not found elsewhere. While the menu includes the usual imported fish from Japan, Canada, Alaska, and Norway, being in Cabo means having access to the best seafood in Mexico just a stone's throw away. In addition to Japanese beers and a wide selection of spirits, Nicksan also offers a well-appointed sake list, where you can find surprisingly good sake distilled in Mexico.

With great food, a convenient location, and impeccable service, Nicksan is a must-visit in Cabo. It's a place where you can finally give your credit card a breather.

Can't miss items on the menu include the Cilantro Sashimi, Maguro Lime Roll, and anything with Curry oil sauce, such as the Clear Lobster Roll. Pair your meal with Nami Junmai Ginjo sake for an enhanced experience.
